The experience

Twelve kilometres out of Chiang Mai the traffic stops and the fields begin. This half-day class is taught in an open-air kitchen set in the middle of a working organic farm, where the lemongrass, galangal, kaffir lime and Thai basil you cook with are growing in beds a few steps from your wok. Classes are capped between four and ten guests, so it never turns into a demonstration you watch from the back.

Pick-up is between 08:30 and 09:00. The first stop is a local fresh market, where the lesson is not just naming ingredients but choosing them: which galangal is young enough, how to spot tired herbs, which of the chillies is heat and which is perfume, what palm sugar and tamarind actually do. At the farm you walk the beds with your instructor and learn the small tricks of picking herbs and vegetables properly before you take your station — your own wok, knife, board and burner, scrupulously clean.

You cook six dishes across the categories, choosing what you want to learn from a long pick-list: rice soup, coconut milk soup or hot-and-sour soup; fried holy basil, cashew chicken or sweet and sour; khao soi, green curry or panaeng; pad thai, papaya salad, sticky rice with mango. Three dishes are set dishes that everyone cooks together, which is how the group learns the same core techniques. You also pound your own curry paste and make a Thai herbal drink — and this is one of very few schools in the country that teaches how to colour rice seven different ways using nothing but plants.

Every dish can be made vegetarian, vegan and/or gluten-free and as mild or as fierce as you like. You eat everything you cook or take it away, a step-by-step recipe e-book follows, and free transfer covers hotels within 4 km of the Old City. Finish is around 14:00.

    Local market visit

    A guided market walk focused on how to tell good ingredients from bad — herbs, pastes, produce, noodles and rices.

    Drive to the organic farm

    About 25–30 minutes out of the city to the farm and its open-air kitchen.

    Farm walk and herb picking

    Walk the organic beds and learn the tricks of picking herbs and vegetables, then take your own cooking station.

    Curry paste and first dishes

    Pound your own curry paste in a granite mortar, then start cooking — a soup and a stir-fry, eaten as you finish them.

    Curry, rice and herbal drink

    Cook your curry, learn the seven natural rice colours and make a Thai herbal drink.

    Lunch and dessert

Frequently asked questions

Yes — unusually well. Every dish on the menu can be prepared vegetarian, vegan and/or gluten-free, and you decide whether each dish is spicy or not. Tell us at booking so the shopping is right, and flag any allergy again with your instructor on the day.

Yes. You build your own menu from the category pick-lists, so nobody at the table cooks the same lunch. A small number of dishes are set-menu dishes that everyone cooks together, so you also learn a few techniques as a group.

Free pick-up and drop-off is included within a 4 km radius of the Chiang Mai Old City. The farm is about 12 km out of town, roughly a 25–30 minute drive. If you are staying beyond the free zone, tell us your hotel and we will confirm or quote a supplement.

Between four and ten. Private courses are available on request if you would rather have the kitchen to yourselves.

Light clothes you do not mind splashing and closed shoes rather than sandals — you will be at a wok and walking through a market and a farm. Aprons are provided; tie long hair back.

Cancel more than one day before departure at no charge. Within six hours of departure, 50% is charged. A last-minute cancellation or no-show is charged in full.

The school teaches how to colour rice seven different natural shades using plants alone — butterfly pea, turmeric, pandan and others. Very few schools in Thailand teach it, and it makes the plate you photograph at the end look spectacular.
